Italian Rice Soup
This soup has great depth of flavor, and is rich and hearty. Serve warm with grated parmesan cheese and crusty Italian bread for a delicious meal!
½ lb. Ground Beef & ½ lb. Ground Pork
3 Tbsp. Extra Virgin Olive Oil
1 Large Onion, Chopped & 4 Cloves Garlic, Minced
½ Tsp. Red Pepper Flakes
1-6oz. Can Tomato Paste
¾ Cup White Rice, Rinsed & Drained
4 Cups Chicken Broth & 4 Cups Beef Broth
1-14.5oz. Can Chopped Tomatoes
2 Tbsp. Dried Oregano, Salt & Pepper to taste
Parmesan Cheese, Grated & Chopped Parsley (Garnish)
In a large skillet, saute the ground beef and ground pork over medium heat for approx. 5 minutes, until cooked through. Drain the fat, crumble the meat and set aside. In a large soup pan, heat the olive oil and add the chopped onion. Saute for approx. 5 minutes, until onion has softened. Add the minced garlic and red pepper flakes, and sauté for one minute. Add the tomato paste and sauté for one minute. Add the rice and sauté mixture for 2 minutes. Add the cooked ground beef and ground pork, chicken broth, beef broth, chopped tomatoes and dried oregano. Bring to a boil, then lower heat and simmer for approx. 20 minutes, until rice is cooked through. Season soup with salt and pepper to taste. Serve warm with freshly grated parmesan cheese and garnish with chopped parsley.
