Insalata di Mamma

A mixed green salad with crumbled gorgonzola and pignoli nuts is one of my Mom’s favorites.  The honey balsamic dressing provides a wonderful balanced flavor with the gorgonzola cheese.

INGREDIENTS:

3 Cups Mixed Greens & 2 Cups Baby Arugula

1 Cup Cherry Tomatoes

3 Tbsp. Red Onion, Sliced Thin

½ Cup Crumbled Gorgonzola & ¼ Cup Pignoli Nuts (Pine Nuts)

Dressing:

1 Tbsp. Dijon Mustard, 1 Tbsp. Honey

¼ Cup Balsamic Vinegar

½ Tsp. Salt & ½ Tsp. Black Pepper

½ Cup Extra Virgin Olive Oil

 

DIRECTIONS:

To prepare the dressing, combine the dijon mustard, honey, balsamic vinegar, salt and pepper in a small bowl.  Whisk until well combined.  Add the extra virgin olive oil in a slow stream, whisking constantly until well combined.  Salad: Place all the salad ingredients in a large bowl.  Drizzle the salad dressing over the top of the salad and season to taste with salt and pepper.  Serve additional honey balsamic dressing on the side.
