Insalata di Zia Nancy with Feta Cheese & Vegetables
Aunt Butchie loves to eat healthy, and this salad is one she would thoroughly enjoy. This recipe combines mixed greens with flavorful grilled vegetables and feta cheese. The salad is topped with a champagne vinaigrette that gives this salad a kick.
¼ Cup Extra Virgin Olive Oil
1 Large Globe Eggplant, Peeled and Sliced
1 Zucchini, Sliced & 1 Summer Squash, Sliced
1 Red Pepper, Sliced
3 Cups Mixed Greens & 1 Cup Baby Arugula
¼ Cup Kalamata Olives, Pitted & ¼ Cup Green Olives, Pitted
½ Cup Feta Cheese, Crumbled
1 Tbsp. Dijon Mustard & 1 Tbsp. Honey
¼ Cup Champagne Vinegar
½ Tsp. Salt & ½ Tsp. Black Pepper
½ Cup Extra Virgin Olive Oil
Drizzle extra virgin olive oil over the sliced eggplant, zucchini, summer squash and red pepper. Grill vegetables (on an outside grill or on a grill pan), and cook until tender, approx. 2 minutes per side. Sprinkle grilled vegetables lightly with salt while warm. Meanwhile, in a small bowl, prepare the dressing by mixing the dijon mustard, honey, champagne vinegar, salt & pepper together. Drizzle the olive oil into the mixture, whisking until well combined. Place all salad ingredients in a large bowl, add the grilled vegetables, feta cheese and olives. Drizzle the salad dressing on top of the salad and season to taste with salt and pepper. Serve additional dressing on the side.
