Insalata di Zia Carmela with Goat Cheese & Strawberries
This salad is really delicious, combining the creamy flavors of the goat cheese with the sweetness of the strawberries and the crunchiness of the pistachios.
3 Cups Mixed Greens
1 Cup Baby Arugula
¼ Cup Salted Pistachio Nuts, Shelled
½ Cup Strawberries, Cleaned and Sliced
½ Cup Crumbled Goat Cheese
1 Tsp. Kosher Salt
4 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Balsamic Vinegar
In a large mixing bowl, combine the mixed greens, baby arugula and salted pistachios. Sprinkle the greens with the kosher salt, then drizzle with the olive oil and balsamic vinegar. Mix well and season to taste with additional dressing ingredients as desired. Add the sliced strawberries and toss to coat. Plate the salad and top with the crumbled goat cheese.
