Chicken, Tomato & Cucumber Salad

This is a simple salad to prepare for a quick weeknight dinner.  Any of your favorite ingredients can be incorporated.  I like to occasionally add a small quantity of baby arugula with the sliced vegetable salad. 

 

INGREDIENTS:

1 ½ lb. Chicken Breast

Olive Oil for Grilling, Salt & Pepper to Taste

1 English Cucumber, Sliced Thin

2 Heirloom Tomatoes, Sliced

¼ Cup Green Olives, Pitted & ¼ Cup Kalamata Olives, Pitted

¼ Cup Feta Cheese, Crumbled

Dressing:

1 Tsp. Kosher Salt, 4 Tbsp. Extra Virgin Olive Oil & 2 Tbsp. White Wine Vinegar

 

DIRECTIONS:

Drizzle the chicken breast with olive oil and season well with salt & black pepper.  Heat a grill pan over high heat, and add the chicken.  Grill for approx. 10 minutes, turning to brown on both sides, until the chicken is well cooked.  In a large bowl, add the sliced cucumber, tomatoes, olives and feta cheese.  Sprinkle with the kosher salt, extra virgin olive oil, then white wine vinegar.  Toss to combine flavors and season to taste as needed.  Plate the grilled chicken on salad plates and serve the salad beside the chicken.
