Roasted Asparagus with Parmesan Cheese
This is a truly easy vegetable side dish. It takes little preparation and very quick baking time. Layer the baking dish with aluminum foil for an even quicker cleanup. I have served this dish many times on a buffet, garnished with lemon slices.
2 lbs. Fresh Asparagus
2 Tbsp. Olive Oil
1 Tsp. Kosher Salt
1 Tsp. Black Pepper
½ Cup Parmesan Cheese, Grated
Wash and trim the asparagus stalks. I usually snap the bottom off of one stalk, and cut the others to that length. Place on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Bake in a preheated 350 degree oven for approx. 15 minutes, until the asparagus are tender. Sprinkle with the parmesan cheese, and return to the oven for approx. 2 minutes, until cheese has melted. Serve warm.
