Quick Cornbread & Leek Stuffing
This is a really simple and quick method to prepare a savory, moist and delicious stuffing. Use prepared corn muffins (either homemade or store bought), and combine with sautéed leeks and thyme for a tasty holiday treat.
½ Cup Olive Oil
½ Cup Butter
½ Cup Celery, Sliced Thin
1 Cup of Leeks, Sliced Thin and Cleaned Well
2 Tbsp. Fresh Thyme, Chopped
Salt & Pepper to Taste
1 16-oz. Pkg. Premade Cornbread (Loaf or Muffins), Crumbled
2 Eggs, Beaten
In a large sauté pan, heat olive oil and melt butter. Add the sliced celery and leeks and sauté for approx. 7 minutes, until leeks begin to tender. Add the fresh thyme and stir. Add salt and pepper to taste, then remove pan from heat. Add the crumbled cornbread muffins and egg, and mix well. Place mixture in a well greased baking dish and bake in a preheated 350 degree oven for approx. 30 minutes, until top is golden brown. Serve warm.
