Waldorf Salad Wraps

I recently attended a trade show, and these wraps were on the luncheon buffet. I thoroughly enjoyed the pairing of the chicken, apples and dried cranberries with a delicious side salad.

INGREDIENTS:
1 Cup Roasted Chicken, Diced
1 Medium Apple, Diced
1 Medium Stalk of Celery, Diced
½ Cup Mayonnaise
¼ Cup Walnuts, Chopped Small
¼ Cup Dried Cranberries
Salt & Pepper to taste

Wrap:
6 Flour Tortillas, Warmed

DIRECTIONS:
In a large bowl, mix all ingredients together and add salt & pepper to taste. Place in the refrigerator for at least 4 hours or overnight for best results. When ready, lightly warm each tortilla shell in a sauté pan so it becomes pliable for rolling. In the center of each tortilla shell, place approx. 3-4 Tbsp. of salad mixture. Fold each outer end to the center, and roll the wrap as tightly as possible without breaking the tortilla. Place inside plastic wrap and refrigerate until ready to serve (at least one hour). When ready to serve, cut the tortilla in half and place on a platter.
