Schiaccate (Little Tuscan Pizza)

These little pizzas make a wonderful appetizer.  Top with any of your favorite ingredients.  Your guests will love these small pizzas.

 

INGREDIENTS:

Pizza Dough (See recipe)

Fresh Mozzarella, Thinly Sliced

Grape Tomatoes, Sliced

Fresh Basil, Chopped

Extra Virgin Olive Oil, Salt to Taste

Optional Items: Kalamata Olives, Pitted & Sliced, Fresh Baby Arugula

 

DIRECTIONS:

Split pizza dought into 4 equal parts. Place each piece of pizza dough on a well floured surface and stretch into a round shape, rotating dough as it is being pressed until it is stretched into a circle.  Place pizza dough on a well greased baking pan.  Top with sliced mozzarella, sliced tomatoes and drizzle with extra virgin olive oil.  Bake in a preheated convection oven at 425 degrees for 9 minutes, or in a regular oven until golden brown (approx. 12-15 minutes).  Remove from the oven.  Add fresh chopped basil and salt as desired.  Serve immediately.
