Sausage & Pepper Panini with Mozzarella
My Dad loves sausage and peppers, so I try to incorporate this mix of flavors as much as possible in different dishes. This Panini sandwich is delicious with the melted mozzarella.
Fresh Mozzarella, Sliced
2 Tbsp. Extra Virgin Olive Oil
Sausage & Peppers:
4 Tbsp. Olive Oil
1 Large Red Bell Pepper, Sliced
Salt, Pepper & Dried Oregano to taste
½ lb. Italian Sausage (Mixed Sweet and Hot)
Sausage & Peppers: In a large sauté pan, heat 2 Tbsp. of olive oil over low heat. Add the sliced bell pepper. Saute for approx. 5 minutes, until the pepper becomes tender. Add the oregano, salt and pepper to taste. Remove from the heat. Separately, place the Italian sausage on a baking pan and cover with the remaining 2 Tbsp. of olive oil. Prick each sausage with a knife several times each, and place in a preheated 350 degree oven for approx. 20 minutes until golden brown and cooked through. Remove from the oven, let cool and slice. When ready, layer the sausage and pepper mixture and the sliced mozzarella on the bread. Brush the outside of the bread with the extra virgin olive oil. Press the sandwich between the hot plates of a Panini grill, or in a pan with a weight for approx. 3-4 minutes, until the bread is properly toasted and the cheese is melted. Enjoy the Panini while it’s still warm.
