Mortadella Pizza Rolls

These pizza rolls are really delicious.  I have experimented with various ingredients, but this original recipe is the best.  Feel free to improvise as you see fit.

 

INGREDIENTS:

Pizza Dough (See recipe)

1 Cup Pesto Sauce (Purchase premade)

1 lb. Mortadella, Sliced Thin

2 Cups Mozzarella, Shredded

½ Cup Pistachios, Chopped

1 Cup Ricotta, Whole Milk

 

DIRECTIONS:

Roll out the pizza dough on a lightly floured surface.  Top with pesto sauce, then the sliced mortadella.  Top with the shredded mozzarella and the chopped pistachios.  Dollop the ricotta over the top.  Roll the dough (jelly-roll style) and slice in 2" pieces.  Place the rolls on a well greased baking sheet and bake for approx. 30 minutes, until golden brown.  When ready to serve, top with additional pesto and pistachio.
