Grilled Pizza with Caramelized Onions, Figs & Gorgonzola
This pizza pairs the sweetness of caramelized onions with the deep flavors of gorgonzola cheese and fresh figs. The pizza is finished with a drizzle of balsamic glaze for a full-bodied taste!
Pizza Dough (See Recipe or purchase Pre-made)
2 Tbsp. Butter, 1 Large White Onion, Sliced Thin
¼ Cup Gorgonzola Cheese, Crumbled & ¼ Cup Fresh Mozzarella, Shredded
¼ Cup Fresh Figs, Sliced Thin (or soak dried figs and slice thin)
1 Tbsp. Balsamic Glaze
Caramelized Onions: In a large sauté pan, heat the 2 Tbsp. butter. Add the thinly sliced white onion and sauté for approx. 20 minutes, until the mixture begins to caramelize. Set aside. Roll out the pizza dough on a well floured surface. Place the pizza dough on a floured baking sheet and move to your outdoor grill. Place the dough on the greased cooking grate, over medium direct heat, and close the lid until the bottom is golden brown, about 3 minutes. Using tongs, flip the dough over (grilled side facing up). Top the dough with the caramelized onions, gorgonzola cheese, fresh mozzarella and fresh sliced figs. The pizza should be over medium-low direct heat, with the lid down. Grill until the bottom is golden brown and the cheese is bubbly, approx. 8-10 minutes. Remove from the grill and drizzle with the balsamic glaze.
