Grilled Pizza with Caramelized Onion, Sausage & Provolone
Any recipe that contains caramelized onions, sausage and provolone is a winner! Again – feel free to improvise if you prefer different ingredients.
Pizza Dough (See recipe)
2 Tbsp. Butter, 1 Large White Onion, Sliced Thin & 1 Red Bell Pepper, Sliced
3 Links Italian Sausage
½ Cup Fresh Mozzarella, Shredded, 4 Slices Provolone
2 Tbsp. Fresh Oregano, Extra Virgin Olive Oil
Onions & Peppers: In a large sauté pan, heat the 2 Tbsp. butter. Add the thinly sliced white onion and the sliced red bell pepper, and sauté for approx. 20 minutes, until the mixture begins to caramelize. Set aside. Sausage: Drizzle the olive oil over the sausage and place the sausage on an outdoor grill over medium heat for approx. 4-5 minutes per side, until the sausage has browned and is cooked through. Slice and set aside. Pizza: Roll out the pizza dough on a well floured surface. Place the pizza dough on a floured baking sheet and move to your outdoor grill. Place the dough on the greased cooking grate, over medium direct heat, and close the lid until the bottom is golden brown, about 3 minutes. Using tongs, flip the dough over (grilled side facing up). Top the dough with the fresh mozzarella, sliced provolone, caramelized onions and peppers, sliced sausage, fresh oregano, and a drizzle of extra virgin olive oil. The pizza should be over medium-low direct heat, with the lid down. Grill until the bottom is golden brown and the cheese is bubbly, approx. 8-10 minutes. Enjoy!
