Pasta Primavera with Chicken
This pasta dish is creamy and delicious. The addition of chicken makes this dish especially hearty. Feel free to add or substitute any of your favorite vegetables to this dish.
2 Cups Penne Pasta (or any type pasta)
2 Cups Asparagus, Cut into 2” Pieces
1 Tbsp. Olive Oil
1 lb. Chicken Breast, Boneless & Skinless, Cut in Strips
1 Cup Peas
½ Cup Sundried Tomatoes, Chopped
1 Tsp. Salt & 1 Tsp. Pepper
2 Garlic Cloves, Minced
¼ Cup Dry White Wine
2/3 Cup Heavy Cream
½ Cup Parmesan Cheese, Grated & ¼ Cup Fresh Parsley, Chopped
In a large saucepan, bring well salted water to a boil and add the asparagus, cooking for approx. 2 minutes. Remove the asparagus from the water and add the penne pasta. Cook the pasta per package directions. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken strips and sauté for approx. 5 minutes, until golden brown. Add the asparagus, peas, sundried tomatoes, salt, pepper and garlic. Saute for 3 minutes. Add the white wine and stir for approx. 1 minute. Stir in the cream and sauté for approx. 2 minutes. Add the pasta and parmesan cheese, and stir to combine flavors for approx. 2 minutes. Remove from heat and add the chopped parsley garnish. Serve warm with additional parmesan cheese if desired.
