Linguini Pescatore di Papa

We enjoyed this delicious dish in Italy.  The Italian word "pescatore", translated means "fisherman".  My Dad is the best fisherman I know.  The pasta dishes he makes with the seafood he catches are fantastic.  This dish reminded me of home!

INGREDIENTS:

1 lb. Linguini

2 Tbsp. Olive Oil, 2 Minced Garlic Cloves, ½ Cup Chopped Onion

½ Cup Dry White Wine

1 lb. Fresh Crabs, Cleaned (Optional - Canned Crabmeat)

1 lb. Shrimp, Peeled & Deveined

2 Cups Crushed Tomatoes, ½ Tsp. Salt, ½ Tsp. Black Pepper

2 Tbsp. Fresh Parsley, Chopped

 

DIRECTIONS:

Bring a large pot of well salted water to a boil.  Add pasta and cook according to package directions (approx. 8-10 minutes for al dente pasta).  While the pasta cooks, in a large skillet over medium heat, combine the olive oil, garlic, and onions.  Saute for approx. 5 minutes, until onions become translucent.  Add the white wine and sauté for approx. 2 minutes.  Add the fresh crabs (or crabmeat) and shrimp, and sauté for approx. 8-10 minutes.  Add the crushed tomatoes, salt and pepper, and simmer for another 10 minutes.  Before draining the pasta, reserve about ½ cup of the cooking water.  Add the cooking liquid and drained pasta to the crab and shrimp mixture in the sauté pan.  Mix well to combine the flavors.  Top with the chopped parsley and serve warm.
