Lasagna Napoletana

This is another dish that is heartier with the addition of meatballs and sausage.  This recipe is delicious and worth the effort!  Make sure you let the lasagna sit for 15-20 minutes after baking to allow the lasagna to set (or you will end up with a soupy mess).

 

INGREDIENTS:

1 lb. Lasagna Noodles, Parboiled (follow box directions-approx. ½ cooking time)

1 15-oz. Container Ricotta, Whole Milk

½ Cup Grated Parmesan Cheese & 2 Cups Mozzarella, Shredded

¼ Cup Fresh Parsley, Chopped

1 Egg, Beaten, 1 Tsp. Salt & 1 Tsp. Pepper

Marinara Sauce (See recipe)

Sausage: 1 lb. Italian Sausage (Mixed Sweet and Hot) & 2 Tbsp. Extra V irgin Olive Oil

Meatballs:  1 lb. Ground Chuck (85% Lean), ½ lb. Sweet Italian Sausage, casing removed

3 Eggs, ½ Cup Pecorino Romano Cheese, Grated, 1 ½ Cup Seasoned Breadcrumbs

3 Tbsp. Garlic, Minced & 3 Tbsp. Fresh Parsley, Minced

DIRECTIONS:

Sausage: Place the Italian sausage on a baking pan and cover with 2 Tbsp. of olive oil.  Prick each sausage with a knife several times each, and place in a preheated 350 degree oven for approx. 20 minutes until golden brown and cooked through.  Remove from the oven, let cool and slice.  Meatballs: Combine all ingredients in a large mixing bowl.  Using an ice cream scoop, measure out the meatballs, and hand roll each ball into a round shape.  Place the meatballs on a greased baking sheet.  Bake in a preheated 350 degree oven for approx. 15-20 minutes, or until meatballs are firm.  Remove from heat, let cool and slice.  Lasagna: In a large bowl, mix together the ricotta, parmesan cheese, shredded mozzarella, chopped parsley, egg, salt and pepper.  Grease the lasagna pan.  Spread a layer of marinara sauce to the bottom of the lasagna pan.  Layer the parboiled lasagna noodles, then the ricotta mixture, marinara sauce and sliced sausage/meatballs to each layer, repeating the layers.  The top layer should be lasagna noodles.  Spread marinara sauce over the top and sprinkle with shredded mozzarella cheese and grated parmesan cheese.  Bake covered in a 350 degree oven for approx. 45 minutes.  Uncover, and bake for 15 additional minutes, until lasagna noodles are cooked.
