Pistachio & Almond Biscotti

This was one of the easiest biscotti recipes I’ve ever made, using almond paste in the mixture. 

 

INGREDIENTS:

2 ½ Cups Flour

1-7oz. Container Almond Paste

2/3 Cup Sugar

2 Tsp. Baking Powder

1 Tbsp. Vanilla Extract

2 Large Eggs

1 Cup Pistachios, Shelled

 

DIRECTIONS:

In a large mixing bowl, combine the flour, almond paste, sugar, baking powder, vanilla and eggs.  Knead the dough until it’s well combined.  Add the pistachios to the mixture.  Place the mixture in two loaves, on a well greased, parchment lined baking sheet.  Bake in a preheated 400 degree oven for approx. 30 minutes, until golden brown.  Remove from the oven and let cool slightly, for about 5-7 minutes.  Slice the loaves to create individual biscotti, and lay the biscotti on the baking sheet.  Bake again for another 15-20 minutes, until golden brown and crispy.  Remove and let cool on a wire rack.
