Similar to a granita dessert, this recipe is simple to make and doesn’t require special equipment. Use fresh, ripe ingredients for the best result. This was inspired by a Food Network Magazine recipe.
Strawberry: 3 Cups Chopped Strawberries, 3 Tbsp. Sugar, 1 Tbsp. Lemon Juice
Pineapple: 3 Cups Chopped Pineapple, 3 Tbsp. Sugar, 1 Tbsp. Lemon Juice
In a food processor or blender, combine the chopped fruit, sugar and lemon juice. Add 3 Cups of ice to the mixture and pulse until the mixture is blended smooth. Pour the mixture into a baking dish. Freeze for several hours, and start to scrape the mixture once you see the edges begin to freeze. Repeat the process until the mixture is completely frozen. When ready to serve, scoop the Italian ice into decorative serving dishes.
