Pork Tenderloin with Fresh Fruit
Pork tenderloin is easy to make and is relatively inexpensive. This cut of meat is also delicious cooked on the grill. The recipe below is seared in a sauté pan and then baked in the oven. This is great served with fresh fruit or any vegetable side dish.
1 Pork Tenderloin
2 Tbsp. Olive Oil
1 Peach, Cubed
½ Cup Grape Tomatoes, Sliced in Half
Remove the pork tenderloin from the package. Dry with paper towels. Season well with Cajun seasoning, or any type of dry seasoning you prefer. In a sauté pan, heat the olive oil over medium-high heat until hot, but not smoking. Add the pork tenderloin and sear each side. Place the seared tenderloin on a baking sheet and place in a preheated 375 degree oven. Bake 15-20 minutes, or until meat thermometer reads 150 degrees Fahrenheit. Take the pork tenderloin out of the oven and let rest for 15 minutes before slicing. Serve with cubed peaches and sliced grape tomatoes. Sprinkle with additional Cajun seasoning and fresh herbs if desired.
