Pan Seared Shrimp with Lemon Butter Sauce
This is another recipe for a quick, delicious weeknight meal. The lemon butter sauce really enhances the flavor of the shrimp. I like to serve this with slices of thick, crusty bread for dipping in the lemon butter sauce.
2 Tbsp. Olive Oil
1 lb. Shrimp, Peeled & Deveined
½ Tsp. Salt & ¼ Tsp. Pepper
3 Tbsp. Butter
1 Tbsp. Lemon Juice
2 Tbsp. Fresh Parsley, Chopped
Lemon Wedges (Optional – Garnish)
In a large sauté pan, heat the olive oil. Add the shrimp, salt and pepper to the pan and sauté for approx. 1-2 minutes, until the shrimp turn pink on both sides. Add the butter, lemon juice and fresh parsley to the shrimp. Saute for approx. 1 minute, until the butter has melted. Serve immediately with lemon wedges if desired.
