This recipe highlights delicious grilled sausage with spicy cherry peppers. This is a wonderful dish on its own or served on a delicious semolina roll.
2 Tbsp. Olive Oil
2 Garlic Cloves, Sliced
1 Large White Onion, Sliced
2 Italian Frying Peppers, Cored, Seeded & Sliced
10 Cherry Peppers, Cored, Seeded & Sliced
2 Tbsp. Fresh Oregano
2 lb. Italian Sausage Ring
In a large sauté pan, heat the olive oil. Add the garlic cloves and sauté for approx. 1 minute, until the garlic becomes golden brown. Add the sliced white onion and sauté for 3-4 minutes, until the onions become translucent. Add the sliced frying peppers and sauté for 3 minutes. Add the sliced cherry peppers and fresh oregano, and sauté for 1-2 minutes. Remove from heat and set aside. Meanwhile, place the sausage ring on an outdoor grill over medium heat for approx. 4-5 minutes per side, until the sausage has browned and is cooked through. Serve warm with the onion and cherry pepper mixture. (If desired, use a skewer through the sausage ring to hold it in place during grilling).
