Grilled Pesto Shrimp Skewers with Lemon Vinaigrette
I always think of May as the beginning of the "grilling season". This is a really simple dish to prepare. The pesto coating really kicks up the flavor, and the olive oil and grilled lemon finish this dish beautifully. You will be sure to enjoy.
1 ½ lbs. Large Shrimp, Peeled & Deveined (Tails On)
Salt & Pepper
½ Cup Pesto (See recipe or purchase premade)
Extra Virgin Olive Oil
2 Lemons, Cut in Half
Skewers (If wooden, let skewers sit in water for approx. ½ hour before using)
Place the shrimp on the wooden skewers. Season with salt and pepper. Brush the pesto sauce on the shrimp skewers to coat. Drizzle the skewers with extra virgin olive oil, then place the shrimp on an outdoor grill over medium heat for approx. 2-3 minutes per side. During the last two minutes of cooking time, place the lemon halves on the grill grates (cut side down), and grill until golden brown. When ready, remove the shrimp from the grill and drizzle again with extra virgin olive oil. Serve warm with the grilled lemon.
