Filet Mignon with Herbed Butter Sauce

I tend to make filet mignon for special occasions.  I prefer a simple preparation with a highly flavored herb butter sauce for the best result.  The herb butter sauce can be prepared in advance and used when needed.

 

INGREDIENTS:

6 Filet Mignon Steaks (5-6 oz. each & about 1” thick)

Salt & Pepper

Herb Butter:

1 Stick of Butter (at room temperature)

2 Tbsp. Fresh Thyme,

2 Tbsp. Fresh Rosemary, Chopped

 

DIRECTIONS:

Season the filet mignon steaks liberally with salt and pepper and let sit until they reach room temperature (about 5-10 minutes).  Meanwhile, combine the room temperature butter with the fresh thyme and the chopped rosemary.  Set aside.  Preheat the broiler and cook the steaks to desired doneness, about 3 minutes per side for medium rare.  Remove from the oven and top with approx. 1 tablespoon of the herb butter.  Serve warm.  Note: Rare (115-120 degrees F), Medium Rare (125-130 degrees F), Medium (130-140 degrees F).
