Broiled Fish Skewers with Prosciutto

This is an interesting preparation for baccala (cod fillets).  The salty prosciutto and fresh herbs really add big flavor to this fish.  Broiling the fish helps to make this a quick and easy dish to make for a weeknight meal.

 

INGREDIENTS:

2 lbs. Cod Fillets, Cut into 1” Pieces

8 Slices Prosciutto, Sliced Thin & Cut into Strips

3 Tbsp. Fresh Rosemary Leaves, Chopped

3 Tbsp. Fresh Thyme, Chopped

3 Tbsp. Olive Oil

DIRECTIONS:

Cut enough prosciutto strips to wrap around the number of 1” cod pieces.  Lay the prosciutto strips out on the counter, and sprinkle the fresh rosemary and fresh thyme on top of the strips.  Wrap the prosciutto strips around the cod, then thread the wrapped fish onto skewers.  Place the skewers on a baking dish and drizzle with olive oil.  Broil for approx. 3-4 minutes, then turn the skewers over and continue to cook for 3 additional minutes.  Serve immediately.
