Traditional Prosecco Peach Bellini

This Traditional Peach Bellini was made famous at Harry’s Bar in Venice.  It has a pink tone because raspberries are added to the peaches to make a delicious puree.  Top with your favorite Prosecco for a refreshing aperitivo!  (Prosecco is an Italian Sparking White Wine)

 

INGREDIENTS:

2 Ripe Peaches, Seeded and Diced

2 Tbsp. Raspberries

1 Tsp. Sugar

1 Bottle Chilled Prosecco

 

DIRECTIONS:

Place the peaches, raspberries and sugar in a blender and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold Prosecco. Serve immediately.
