Brie with Mushrooms & Herbs
This brie, warmed and paired with mushrooms and herbs makes a delicious appetizer. This was adapted from a bon appétit recipe. Serve with toasted baguette slices and mixed crackers.
2 Tbsp. Olive Oil
8 oz. Wild Mushrooms, Thinly Sliced
¼ Cup Fresh Herbs (rosemary and thyme, snipped)
2 Garlic Cloves, Minced
1/8 Tsp. Salt
1/8 Tsp. Pepper
1 1-lb. Round of Brie Cheese
Heat the olive oil in a sauté pan over medium heat, and add the sliced mushrooms. Saute for approx. 5 minutes, until mushrooms begin to turn golden. Add the minced garlic and fresh herbs, along with the salt and pepper. Saute 2 minutes more, and let cool. Meanwhile, place brie on a well greased baking dish, and cut off top rind of brie. Place the cooled mushroom mix on top of the brie. Cover and refrigerate for at least 30 minutes. When ready, bake the brie in a 350 degree oven for approx. 10 minutes, or until brie begins to soften. Remove from oven and let cool several minutes before transferring brie to a serving platter. Serve with toasted baguette slices and crackers if desired.
